How to make cinnamon pears for canning with cinnamon red hot candy.

21 pounds of pears
5 cups sugar
6 cups water
105 Cinnamon Red Hot candies

Steps:

  • Prepare your jars and add water to your water bath canner. Start heating the water.
  • Prepare the syrup on the stove. Bring the water and sugar boil to dissolve the sugar and reduce the heat so the syrup stays hot.
  • Wash, peel, and cut your pairs. You can add Fruit Fresh to prevent browning if desired.
  • Add the pears and to the syrup and simmer for 5 minutes to heat the pears for a hot pack.
  • Place 15 cinnamon red hot candies in each quart jar.
  • Use a slotted spoon to place the pears into hot jars. Fill the jars with the syrup. Leave a ½ inch headspace.
  • Wipe the rims with a cloth, remove air bubbles, and place the lids on the jars.
  • Process pints for 20 minutes and quarts for 25 minutes. Adjust for altitude as needed.

1 tablespoon unsalted butter
2 large Bartlett pears, quartered, cored and thinly sliced
2 cups fresh or thawed, frozen cranberries
1/3 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon grated orange zest
1 tablespoon orange juice
2 pints vanilla ice cream
Crumbled gingersnaps for garnish

Steps:

  • In a medium saucepan, melt butter over medium heat and then add pears, cranberries, sugar, cinnamon, orange zest, and juice. Cook, stirring occasionally, until the fruit has softened and the liquid has reduced slightly, 10 to 15 minutes. Transfer to a serving bowl to cool before serving, at least 15 minutes.
  • To serve, scoop ice cream into bowls, top with cranberry-pear compote, and sprinkle with gingersnaps.
