Boneless Chicken Breasts with Red Chili Sauce image

For red chili sauce
4 dried New Mexico red chilies*, stemmed and seeded (wear rubber gloves)
1 small onion (about 1/4 pound), halved
3 large garlic cloves
2 tablespoons raisins
1 1/2 teaspoons salt
For chicken:
2 tablespoons nonfat plain yogurt
2 large garlic cloves, minced and mashed to a paste with 1/2 teaspoon salt
1/2 teaspoon ground cumin
four 5-ounce skinless boneless chicken breast halves
1 teaspoon vegetable oil
1 tablespoon coarsely grated Münster
*available at some specialty foods shops

Steps:

  • Preheat oven to 400°F.
  • Make red chili sauce:
  • In a saucepan simmer chilies, onion, and garlic in water to cover 20 minutes and with a slotted spoon transfer to a blender. Add 1/2 cup cooking liquid, raisins, and salt and blend until smooth. Sauce may be made 1 week ahead and chilled, covered.
  • Make chicken:
  • While chilies are simmering, in a bowl stir together yogurt, garlic paste, cumin, and salt to taste. Add chicken and coat with marinade. Marinate chicken, covered and chilled, at least 15 minutes and up to 1 day.
  • In a 10-inch non-stick skillet heat oil over moderately high heat until hot but not smoking. Add chicken with marinade clinging to it, skinned sides down, and sauté 1 minute on each side, or until golden-brown patches appear.
  • Add chili sauce to skillet and bring to a simmer, uncovered, scraping up any brown bits. Transfer chicken mixture to a shallow baking pan just large enough to hold chicken in one layer and bake, covered, 15 minutes. Remove cover and sprinkle Münster over chicken. Remove pan from oven and let stand 1 minute to melt cheese.

1/4 cup fresh squeezed lime juice
2 tablespoons ancho chili powder
3 cloves garlic, coarsely chopped
6 chicken thighs

Peanut-Red Chile BBQ Sauce, recipe follows
2 tablespoons canola oil
1 large Spanish onion, coarsely chopped
5 cloves garlic, coarsely chopped
3 cups canned plum tomatoes and juices, pureed
1 cup water
1/4 cup ketchup
1/4 cup red wine vinegar
1/4 cup Worcestershire sauce
3 tablespoons Dijon mustard
3 tablespoons dark brown sugar
2 tablespoons honey
1/4 cup molasses
3 tablespoons ancho chili powder
3 tablespoons pasilla chili powder
2 tablespoons pureed chipotle chiles in adobo, pureed
Salt and freshly ground pepper
1 tablespoon canola oil
2-inch piece fresh ginger, peeled and finely chopped
1 1/2 cups Mesa BBQ Sauce
2 cups homemade chicken stock or low-sodium canned chicken broth
2 tablespoons soy sauce
1/4 cup peanut butter
Salt and pepper
1/2 head red cabbage, finely shredded
1 small red onion, halved and thinly sliced
1/4 cup rice wine vinegar
1/2 cup freshly squeeze orange juice
1/4 cup canola oil
1 tablespoon honey
1/4 cup chopped cilantro leaves
2 tablespoons finely chopped fresh mint leaves
3 cups corn masa mix
1 1/2 teaspoons salt
2 1/4 cups warm water
Vegetable oil, for frying
Shredded chicken, guacamole, beans and cheese or your favorite filling
1/2 finely chopped roasted peanuts
1 tablespoon light brown sugar
2 tablespoons finely chopped cilantro leaves

Steps:

  • Whisk together orange and lime juices, chili and garlic in a shallow baking dish, add the chicken thighs, turn to coat and marinate 1 to 4 hours in the refrigerator.
  • Preheat grill to high or grill pan over high heat. Remove thighs from the marinade and season with salt and pepper on both sides. Grill for 4 to 5 minutes on each side or until just cooked through. Brush with some of the peanut sauce during the last few minutes of grilling.
  • Place tacos, chicken, peanut-red chili sauce, red cabbage slaw and relish in bowls and on serving platters and serve.
  • Heat the oil over medium-high heat in a heavy-bottomed medium saucepan. Add the onions and cook until soft, 3 to 4 minutes. Add the garlic and cook for 1 minute. Add the tomatoes and water. Bring to a boil and simmer for 10 minutes. Add the remaining ingredients and simmer for an additional 30 to 40 minutes until thickened, stirring occasionally.
  • Transfer the mixture to a food processor and puree until smooth, season with salt and pepper, to taste. Pour into a bowl and allow to cool at room temperature. Sauce will keep for 1 week in the refrigerator stored in a tightly sealed container.
  • Heat the oil in medium saucepan over medium heat; add the ginger and cook until soft. Increase heat to high, add the BBQ sauce and chicken stock and cook, stirring occasionally, until reduced by half.
  • Whisk in the soy sauce and peanut butter and cook for 5 to 7 minutes longer. Season with salt and pepper.
  • Place cabbage and onion in a large bowl. Whisk together the vinegar, orange juice, oil and honey and pour over the cabbage. Add the cilantro and season with salt and pepper. Garnish with mint. Let sit at room temperature for 20 minutes before serving.
  • Combine the masa mix, salt and warm water in a large bowl and mix until a smooth dough forms. Pull off pieces of dough and roll them into balls about the size of a ping pong ball.
  • Cut a quart size resealable plastic bag open down both sides, to form a rectangle. Use the bag to line the tortilla press as you shape the tortillas so they do not stick: Lay 1 side of the plastic over the bottom of the press. Place a ball of dough in the center, and fold the other side of the plastic over the dough. Shut the top of the tortilla and press firmly down on the dough to shape the tortilla.
  • Meanwhile, pour 2 inches of vegetable oil into a large deep pot and heat to 350 degrees F.
  • Drop a tortilla into the hot oil and, using a metal spatula, repeatedly douse the tortilla with the hot oil until it begins to puff up. Flip it over and, using the spatula, make an indentation in the center of the tortilla to form a taco shape. Transfer to paper towels to drain.
  • Fill each taco with 2 tablespoons of shredded chicken, guacamole, beans and cheese or your favorite filling.
  • Combine all ingredients in a small bowl just before serving.

3/4 cup fresh lemon juice
3/4 cup dry white wine
6 tablespoons olive oil
4 1/2 tablespoons California chili powder
9 garlic cloves, chopped
3 shallots, chopped
2 tablespoons soy sauce
2 tablespoons honey
1 1/2 tablespoons fresh oregano leaves or 1 1/2 teaspoons dried
8 large boneless chicken breast halves with skin
Oregano sprigs (optional)

Steps:

  • Puree first 9 ingredients in blender until smooth. Using meat mallet, pound chicken breasts between sheets of plastic wrap to 1/2-inch thickness. Place chicken in 13x9x2-inch glass baking dish. Pour marinade over and turn to coat. Cover and refrigerate overnight.
  • Prepare barbecue (medium-high heat) or preheat broiler. Drain marinade into small saucepan. Boil 5 minutes. Season chicken with salt and pepper.

  • 1. In a heavy medium saucepan, heat 2 tablespoons of the oil over medium heat. Add the onion, and cook, stirring frequently, until the onion begins to brown, 3 to 4 minutes. 8 cloves garlic, unpeeled
4 medium dried ancho chilies (about 2 ounces), stemmed and seeded
8 medium dried guajillo chilies (about 2 ounces), stemmed and seeded
1 1/2 teaspoons dried oregano, preferably Mexican
1/8 teaspoon ground cumin, preferably ground fresh
2 2/3 cups chicken broth, homemade or low-sodium canned, plus more if needed 1 1/2 tablespoons vegetable or olive oil
1 2 1/2- to 3-pound chicken, quartered
1 medium white onion, peeled and cut across into1/8-inch-thick slices
1 pound red-skinned potatoes (about 8 small), quartered
2 cups thinly sliced shiitake mushrooms
1 teaspoon kosher salt, plus more to taste
1 1/2 tablespoons vegetable or olive oi

Steps:

  • Heat a griddle or heavy skillet over medium heat. Add the unpeeled garlic and roast until softened, shaking pan, about 15 minutes (garlic will blacken in spots). Cool and peel.
  • Meanwhile, heat another skillet. Open and flatten the chilies (they may break), and toast 2 at a time, pressing them against the hot surface until they crackle and emit wisps of smoke. Flip over and toast other sides. Place in a bowl of hot water. Weight with a plate to keep the chilies submerged, and soak for 30 minutes. Drain.
  • Place the garlic, chilies, oregano, cumin and 2/3 cup of chicken broth in a food processor or blender and process until smooth, scraping and stirring. Add more broth, if needed, to puree the chilies. Press through a medium-mesh sieve and set aside. (The dish can be made ahead up to here.)
  • Heat the oil in a large, wide pot over medium-high heat. Pat the chicken dry and place in the pot in a single uncrowded layer, in batches if necessary. Cook until browned, about 4 minutes per side. Remove from the pan and set aside.
  • Place all but 2 onion slices in the pot. Saute until browned, about 8 minutes. Add the chile puree and cook, stirring constantly, until thickened and much darker, about 5 minutes. Stir in the remaining 2 cups of broth. Simmer for 15 minutes, stirring occasionally.
  • Stir in the potatoes and mushrooms, cover and simmer over medium-low heat for 10 minutes. Push the chicken legs into the sauce, cover partly and cook 15 minutes. Push the remaining chicken into the sauce, cover partly and cook until done, about 30 minutes longer.
  • Transfer the chicken to a warm, deep serving platter. Season the sauce and vegetables with salt. Spoon the sauce over the chicken and arrange the vegetables around it. Shape the reserved onion slices into rings and scatter over the vegetables. Serve.

A good old, stay-warm shredded chicken chili to have on a chilly winter day! I used red pepper flakes to spice things up a bit. Top with cheese and sour cream and serve with corn muffins.

1 (15 ounce) can dark red kidney beans, drained

½ teaspoon chili powder
½ teaspoon dried oregano
3 cups shredded rotisserie chicken

Steps:

  • Heat oil in a pot over medium-high heat. Saute onion, bell pepper, and garlic in the hot oil until onion is soft, about 5 minutes. Add tomatoes, kidney beans, cumin, chili powder, and oregano. Let simmer for 15 minutes.

4 cups cooked pinto beans
4 cups cooked great northern beans
1 1/2 quarts hot water
2 tablespoons sysco chicken base
4 chicken breasts, cooked & diced
1 (4 ounce) can diced pimentos, with juice
1 1/2 teaspoons ground cumin
2 teaspoons chili powder
1 (4 1/2 ounce) can diced green chilies, with juice
1 white onion, peeled and diced
1 teaspoon celery seed
1 teaspoon ground thyme
1/2 teaspoon salt or 1/2 teaspoon salt substitute

Steps:

  • Put all ingredients in a dutch oven with lid or roaster with lid.
  • Put in the oven on the middle rack.
  • Oven 300*.
  • Cook 3 to 4 hours. Check once or twice to see if there is enough liquid. If it is getting a little too dry, add 1 cup water at a time and stir. Taste. You might want to add a little more salt.
  • Note: If you want hot chili add seeded diced jalapeno peppers, two will do.

SWEET RED CHILI CHICKEN SATAY

2 pounds boneless skinless chicken thighs, or 8 thighs each cut into 3 pieces
1/2 cup sweet chili sauce
1/2 cup pineapple juice
1 tablespoon plus 1 teaspoon soy sauce
2 teaspoons minced garlic
Oil, for grill
Special equipment: 24 bamboo skewers, soaked in water 20 minutes

Steps:

  • Cut the chicken thighs into 1/2-wide long strips and place into a large resealable bag. In a bowl, whisk together the chili sauce, pineapple juice, soy sauce, and garlic. Pour the marinade into the bag over the sliced chicken. Seal the bag and toss to coat completely. Place the bag into a large bowl and put into the refrigerator to marinate for at least 1 hour or as long as overnight.
  • To serve: Preheat a grill or grill pan over medium-high heat. Thread the chicken strips onto the skewers. Oil the grill gates and place the chicken on the grill. Cook until the chicken is just cooked through, 4 to 5 minutes per side. Remove from the heat and serve immediately.

this is adapted from a Barefoot Contessa recipe. use whatever beans you like. the tomatoes i like are Muir Glen fire roasted. any bell pepper color is fine, i just like the mix.

1 1/2 lbs boneless skinless chicken breasts (3 large breasts)
2 tablespoons olive oil
2 onions, chopped
1 chipotle chile in adobo, chopped (plus a little of the sauce)
2 tablespoons chili powder
1 tablespoon cumin
1/2 teaspoon cayenne pepper
2 teaspoons salt
3 garlic cloves, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
56 ounces diced tomatoes (i like the fire roasted kind)
15 ounces tomato sauce
2 cups chicken stock
15 ounces chili beans, drained and rinsed
15 ounces kidney beans, drained and rinsed

Steps:

  • cook chicken- boil or bake- cool and shred or chop.
  • heat oil in a dutch oven or heavy pot and saute for 5 minutes.
  • add garlic, peppers and spices, saute 5 more minutes.
  • add tomatoes and stock, simmer covered for 20 minutes.
  • add chicken and beans, simmer uncovered for 30 minutes, add liquid to your liking or simmer until thickened to your liking.
  • i serve with bread or corn bread for dipping, sour cream, cheese and fritos are good too.

3 tablespoons vegetable oil
2 large white onions, chopped medium
2 red bell peppers, chopped medium
2 tablespoons chili powder (or more, to taste)
1 tablespoon cumin
3 tablespoons Mexican oregano
1/4 cup chicken broth
1 (14 1/2 ounce) can corn, drained
1 (14 1/2 ounce) can black beans, drained and rinsed
2 (29 ounce) cans tomato sauce
2 (14 1/2 ounce) cans diced tomatoes (chili-ready)
1 hot red chili pepper, whole (or 1 jalapeno pepper, minced)
1 cup chopped cilantro
2 lbs boneless skinless chicken breasts, left whole
1 teaspoon salt
shredded cheese, sour cream, diced onion to garnish

Steps:

  • Heat the oil over medium-high heat until shimmering. Sautee onion, bell pepper, chili powder, cumin and mexican oregano until vegetables are tender. Deglaze pan with chicken broth, scraping up any brown bits, and transfer to the slow cooker.
  • Add tomato sauce, tomatoes, corn, black beans, salt, and the chili pepper to the slow cooker. Stir it all together.
  • Nestle the chicken breasts into the mixture, cover, and cook on low for about 4.5 hours.
  • Remove chicken from crock pot and shred, and return to the crock. Add chopped cilantro, stir, and continue to cook about another half hour.
  • Serve garnished with shredded cheese, sour cream and diced onion. Tortilla chips an added bonus for scooping. :).

1 1/2 T vegetable or corn oil
1 med. onion, chopped fine
3 med. garlic cloves, minced
3 T chili powder
2 t ground coriander
2 t ground cumin
1/2 t salt
2 t sugar
12 oz. boneless skinless chicken thighs, trimmed and cut into 4 in. strips
2 8 oz. cans tomato sauce
1/2 C coarsely chopped cilantro
1 4 oz. can pickled jalapenos, drained and chopped (about 1/4 C)
8 oz. sharp cheddar cheese
Tortillas and Toppings:
10 six inch corn tortillas
3 oz. grated sharp cheddar cheese
3/4 C sour cream
1 avocado, diced
5 romaine lettuce leaves, shredded
2 limes, quartered

Steps:

  • 1. Heat oil in me. saucepan over med-high heat until hot and shimmering but not smoking, about 2 min.; add onion and cook, stirring occasionally, until softened and beginning to brown, about 5 min. Add garlic, chili powder, coriander, cumin, salt, and sugar; cook, stirring constantly, until fragrant, about 30 sec. Add chicken and cook, stirring constantly, until coated with spices, about 30 sec. Add tomato sauce and 3/4 C water; stir to separate chicken pieces. Bring to a simmer, then reduce heat to med-low; simmer uncovered, stirring occasionally, until chicken is cooked through and flavors have melded, about 8 min. Pour mixture through medium mixed strainer into med. bowl, pressing on chicken and onions to extract as much sauce as possible; set sauce aside. Transfer chicken mixture to large plate; freeze for 10 min. to cool, then combine with cilantro, jalapenos, and cheese in medium bowl and set aside. 2. Adjust oven racks to upper- and lower- middle positions and heat oven to 300. 3. Place tortillas on two cookie sheets and spray both sides with PAM. Bake until soft and pliable, about 4 min. 4. Spread 3/4 C sauce on bottom of 13 x 9 baking dish. Increase oven temp. to 400. Place 1/3 C filling on each tortilla, roll tightly, place seam down in dish. Pour remaining sauce over enchiladas and use spoon to spread evenly. Sprinkle 3/4 C grated cheese down the middle of the enchiladas. 5. Cover dish with foil, bake 400 for 20-25 min.

I couldn't wait to get my hands on this recipe! Having eaten this chili twice before I am now a very happy bunny that I've finally managed to get hold of the recipe. To be honest, I actually had no idea that this chili has chocolate in, please don't leave it out - it really brings out all the flavours! Edited 10/06/09 to add: I made this chili this week & it turned out perfectly. As I was feeding 2 small children I reduced the chili powder to about 2 tbsp which was fine for them. Only other change was that I used red kidney beans in place of the pinto beans......The leftovers were great the next day.

2 rotisserie-cooked chicken (medium store bought rotisserie)
2 quarts chicken broth
6 tablespoons vegetable oil (or canola)
2 large brown onions, diced
2/3 cup chili powder (yes, it reallysays that! However start with 1/4 cup)
1 1/2 tablespoons ground cumin
1 1/2 tablespoons dried oregano
2 (28 ounce) cans crushed tomatoes (with juice)
2 (16 ounce) cans pinto beans, rinsed and drained
6 -8 garlic cloves, minced
1 1/2 ounces bittersweet chocolate, roughly chopped
3 tablespoons cornmeal

Steps:

  • Prepare the chickens by pulling all the meat from the bones and tearing into bite sized pieces. Reserve the bones and skin.
  • Combine the chicken bones and skin, chicken broth and 4 cups of water in a large pot and bring to a boil over a medium-high heat. Reduce heat to low, partially cover and simmer until the bones release their flavour - about 30 minutes. Strain the broth into a large bowl, now discard the bones and skin.
  • Heat oil in a large roasting pan set over 2 burners on medium-high heat. Add onions and saute until soft - about 5 minutes. Add chili powder, cumin and oregano, reduce heat to a medium-low & cook, stirring until spices are fragrant; 1-2 minutes.
  • Stir in chicken, tomatoes and broth; bring to a simmer. Reduce the heat to low and simmer uncovered, stirring occasionally to blend the flavours, for about 30-40 minutes.
  • Stir in the beans, garlic and chocolate, simmer to blend flavours for about 5 minutes. Sprinkle the cornmeal over the chili, stir in and simmer for a further 2-3 minutes or until it has thickened up.
  • Turn off the heat, cover and let stand for about 5 minutes.
  • Ladle into bowls and serve immediately with your choice of accompaniments.

2 quarts chicken broth
6 T vegetable oil
2 large onion, medium diced
2/3 C chili powder
1 1/2 T ground cumin
1 1/2 T dried oregano
2 cans(28 ounce each) crushed tomatoes
2 cans (16 oz) pinto beans
drained and rinsed
6 med. garlic cloves, minced
1 1/2 oz bittersweet or semisweet chocolate, chopped
3 T cornmeal

Steps:

  • Combine chicken bones and skin, chicken broth and 4 C water in a large pot and bring to a boil over medium-high heat. Reduce heat to low, patially cover and simmer until bones release their flavor about 30 min. Strain and discard bones and skin. Heat oil in a large roasting pa n set over 2 burners on med-hi heat. Add onions and saute until soft, 4-5 min Add chili powder, cumin and oregano, reduce heat to med- low and cook , until spices are fragrant, 1-2- min. Stir in chicken, tomatoes and broth and bring to a simmer. Reduce heat to low and simmer uncovered, stirring occ about 25-30 min. Stir in beans, garlic and chocolate and simmer to blend flavors about 5 min.Sprinkle cornmeal over chili, stir in and simmer to thicken chili, 1-2 min longer. Turn off heat, cover and let stand for 5 min.

INSTANT POT RED CHICKEN CHILI



Instant Pot Red Chicken Chili image

Number Of Ingredients 9

1 onion
3 boneless skinless chicken breasts (can be frozen)
1 package taco seasoning
1 can black beans
1 can chili beans
2 cans Ro-tel
1 can whole kernel corn, drained
1 can tomato paste
1 bottle beer, or 1.5 cups chicken broth

Steps:

  • Chop the onion and place it in the bottom of the Instant Pot.
  • Layer the chicken breasts on top of the onion and sprinkle the taco seasoning on top of them.
  • Add the canned ingredients on top of the chicken and seasoning (beans, Ro-tel, corn and tomato paste). Pour the beer or chicken broth over the top of the mixture.
  • Close the pressure cooker and set the valve to seal. Set the mode to soup and the timer to 8 minutes and let it cook. Natural release for 10 minutes then open the lid.
  • Remove the chicken breasts from the pot and use two forks or tongs to shred the chicken and then mix the chicken back into the chili to evenly distribute.
  • Serve hot with toppings of your choice.
