ZUCCHINI & TOMATO FRITTATA image

Number Of Ingredients 6

8 eggs
1/4 tsp. crushed red pepper
1 tbsp. olive oil
1 small zucchini, thinly sliced
1/2 cup cherry tomatoes, halved
2 oz. bite-size fresh mozzarella balls (bocconcini)

Steps:

  • 1. Preheat broiler. In a medium bowl, whisk together eggs, 1/4 tsp. salt, & crushed red pepper. In a 10-inch oven-going skillet heat oil over medium heat. Layer zucchini slices evenly on bottom of skillet. Cook 3 minutes, turning once. Top with tomatoes. Pour egg mixture over vegetables in skillet. Top with mozzarella. Cook 4 to 5 minutes or until sides begin to set, lifting with a spatula to allow the uncooked portion to run underneath. Transfer to broiler. 2. Broil until set, about 2 to 3 minutes. Cut into wedges & serve.
