Zucchini Pie image

I don't know where this recipe originated from other than my cousin Kathy Zekoll used to make it all the time and everyone always loved it!

Number Of Ingredients 8

1 1/4 c bisquick
3 c raw zucchini sliced thin or coarse grated
4 eggs
1/2 c chopped onion
3 sprig(s) parsley - minced
1/2 c grated cheese (i use cheddar & swiss mix)
1/2 c oil (i prefer to use coconut oil)
salt and pepper to taste

Steps:

  • 1. Preheat oven to 325 and grease your pie plate.
  • 2. In a large mixing bowl combine all ingredients together. Pour mixture into your greased pie plate.
  • 3. Bake at 325 degrees for 45 minutes or until golden brown.
