These are soooo good. You can use them as a side dish or for an appetizer...You could also use yellow squash, grated carrots, potatoes, instead. They are all wonderful. Hope you enjoy them. There is nothing I like better than sharing with friends.

- 1. Blend Bisquick, parmesan cheese, salt and pepper: Add the two eggs and the grated zucchini, making a batter
- 2. Melt the butter over medium heat in a skillet and pour batter, as if you were making small pancakes. Fry for 3 minutes on each side. Serve while warm.
