1 1/2 c all-purpose flour
1 c sugar
1 tsp ground cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1 large egg
1 c mashed banana
1/2 c vegetable oil
1/2 tsp banana extract
1/2 tsp vanilla extract
1 c shredded zucchini
1 c chopped pecans

Steps:

  • 1. Preheat oven to 325 degrees Fahrenheit. In a large bowl, combine the flour, sugar, cinnamon, baking powder, baking soda, and salt.
  • 2. In a separate bowl, add the egg, banana, oil, and extracts; mix well.
  • 3. Stir into dry ingredients just until moistened.
  • 4. Fold in zucchini and pecans.
  • 5. Pour batter into three 5 3/4 x 3 x 2-inch mini loaf pans that have been coated with non-stick cooking spray.
  • 6. Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
  • 7. Cool for 10 minutes before removing from pans to wire racks to completely cool.
