Steps:
- In a large skillet, heat oil and add garlic until just starting to "speak" - about 1 minute.
- Add zucchini, salt and pepper. Cook uncovered over medium heat for about 5 minutes, until zucchini is crisp-tender, stir occasionally.
- To serve, sprinkle with cheese and torn fresh basil. Optional - toss and serve with halved cherry tomatoes.
