3/4 lb lean ground beef
1 Tbsp olive oil
2 large onions, chopped
2 large red bell peppers, chopped
1 large green bell pepper, chopped
5 clove garlic, minced
2 Tbsp chili powder
1 tsp italian seasoning
1/4 c dry red wine
3 zucchini, chopped
2 small pepperoncini peppers, chopped
1 jar(s) (24-26 oz.) marinara sauce
1 can(s) (15 oz.) cannellini beans, rinsed and drained

Steps:

  • 1. Cook beef in skillet over medium-high heat until no longer pink, about 5 minutes. Drain and transfer to slow cooker.
  • 2. Heat oil in skillet over medium-high heat. Cook onions, peppers, and garlic, stirring, for 5 minutes. Transfer to slow cooker.
  • 3. Add remaining ingredients and 1 tsp. salt. Cover and cook on LOW setting for 4 to 5 hours. Garnish with chopped basil, if desired.
