Yvonne's Cheeseburger Pie image

My mother was quite the cook! My father & I loved her creativity in the kitchen! Mom was fighting breast cancer ('68-'77), and was able to make some incredible meals, even if she wasn't feeling well! After she passed away, I found her old, tin, "Family Circle" Recipe Box, and found this favorite of my childhood.

Number Of Ingredients 9

1 pound(s) ground beef
1.5 cup(s) chopped onion
- salt
- pepper
1.5 cup(s) milk
3/4 cup(s) biscuit mix
3 - eggs
1 - tomato, sliced
1 cup(s) cheddar cheese, shredded

Steps:

  • Heat oven to 400 degrees.
  • Grease pie plate.
  • Brown beef and onion; drain well. (I rinse my ground beef in a collander--reduces the fat content of the dish.)
  • Stir in salt and pepper.
  • Spread in plate.
  • Beat milk, baking mix and eggs until smooth, 15 seconds in blender on high or 1 minute with hand beater.
  • Pour into place.
  • Bake 25 minutes.
  • Top with tomatoes; sprinkle with cheese.
  • Bake until knife inserted in center comes out clean 5-8 minutes.
  • Cool 5 minutes prior to serving.
  • *My add-ons to mom's recipe: To add a "Texas" kick, add a litte chili powder, OR some chopped jalepenos. You can also top it off with a dollop of Sour Cream (I prefer "Daisy") & some Pico de Gallo. Or add some cooked, crumbled Bacon to the beef mixture~!
