Yule Log
6 eggs
1 cup sugar
1 tsp. vanilla
1/2 cup flour
1/2 cup cocoa
Crème Filling
1/2 cup cocoa
1/2 cup confectioners sugar
2 cup heavy cream
2 tsp. vanilla
Chocolate Glaze for Yule Log
3oz chocolate chips
2 Tbsp. butter
1/2 tsp. vanilla
1 Tbsp. hot water

Steps:

  • 1. Heat oven to 350 degrees 2. Line a 17x12x1 pan with wax paper. Grease lightly 3. Beat eggs, sugar, vanilla on high in a large bowl. Beat for 5-7 minutes until thick and pale yellow. 4. Mix cocoa and flour in another bowl and blend together. 5. Add cocoa/flour mixture a third at a time to the egg mixture and blend. 6. Spread batter evenly on waxed pan. Rap the pan on the counter to remove air bubbles. 7. Bake in the upper third of oven for 12-17 minutes. Edges should pull away from sides of pan. 8. While cake is hot, carefully invert onto a clean dishcloth sprinkled with confectioners sugar. Place wax paper on cake and roll. Cool rolled up. Crème Filling for Yule Log 1. Sift cocoa and flour into bowl 2. Beat cream and vanilla with sugar and cocoa until "peaks" form 3. Cover with plastic wrap and place in refrigerator until ready to use Chocolate Glaze for Yule Log 1. Melt chocolate chips and butter in top of double boiler 2. Add vanilla and hot water until chocolate is thickened slightly and glossy
