Winter Warm-Up Beef Simmer image

While this rich hearty supper simmers, enjoy the brisk autumn air or the first snowflakes of the season. Don't let the long list of ingredients deter you from making this recipe. 1 cup onion, chopped
6 bacon, slices cut into 1/2-inch pieces
3 lbs beef chunk roast, trimmed cut into 2 1/2-inch in pieces
8 medium red potatoes, halved
3 medium carrots, cut into 1-inch pieces
3 medium onions, halved
8 ounces fresh mushrooms, halved
1/2 cup fresh parsley, chopped
1 cup apple juice
10 1/2 ounces beef broth
6 ounces tomato paste
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon thyme leaves
1 teaspoon fresh garlic, minced
2 bay leaves

Steps:

  • heat oven to 325*F.
  • in Dutch oven place onions, bacon and roast. cook over med-high heat, stirring occasionally until bacon and roast are browned.
  • stir in vegetables.
  • stir in remaining ingredients, cover, bake for 1 1/2 hours.
  • uncover continue baking, stirring occasionally for 2 to 2 1/2 hours or until roast is fork tender.
