WILD RICE CASSEROLE image

1 c sharp cheddar (Kraft sharp)
1 c cubed Velveeta
1/2 c minced onion
1/2 c chopped green pepper
1 c black olives
1 c wild rice (rinsed well)
1 c canned mushrooms (and juice)
1/4 c olive oil
1 #2 can stewed tomatoes (and juice)
salt and pepper
butter

Steps:

  • Add first 7 ingredients in layers in the order given above to a large, heavy high-sided casserole (LeCreuset type) Add 1 c boiling water before baking Bake covered at 350 for 1 1/2 hours Uncover and reduce heat to 325 for another half hour Let sit for 15 minutes before serving.
