White Chocolate Cranberry Cookies image

I first tried this concept while in England in high school. Came home and improvised my own version and it was delish! Here it is...

Number Of Ingredients 10

1/2 cup(s) tub margarine
1/2 cup(s) crisco or vegetable shortening
1 cup(s) brown sugar
1/2 cup(s) sugar
3/4 teaspoon(s) baking soda
2 - eggs
1 teaspoon(s) vanilla
2 1/2 cup(s) flour
12 ounce(s) white chocolate chips
12 ounce(s) dried cranberries, hydrated in 1/2 cup boiling water then drained just prior to use

Steps:

  • Preheat oven to 375 F. Line cookie sheet with parchment paper
  • Beat the margarine and crisco til smooth and creamy. Add sugars and baking soda. Cream til well blended. Add eggs and vanilla. Slowly add flour.
  • Fold in chocolate chips and drained, hydrated cranberries
  • Using a cookie scoop or two spoons drop cookie dough in rounds about truffle-size onto cookie sheet.
  • Bake about 8-12 minutes each batch depending on your oven, watching to remove while barely browned to maintain chewiness!!
