WHITE CHOCOLATE CHUNK BROWNIES image

10 oz good quality white chocolate such Lindt or Baker's chopped
1 1/2 sticks unsalted butter
2 1/2 unbleached all purpose flour
1 tsp baking powder
1 tsp salt
6 lg eggs
2 cps sugar
1 tsp vanilla extract

Steps:

  • Preheat oven to 350. Line 13 x 9 x 2 baking pan with foil, allowing foil to extend over sides. Butter foil. Reserve 1/3 cup chopped white chocolate with butter in small saucepan. Stir over low heat until metled and smooth. Remove from heat. Combine flour; baking powder and salt in medium bowl. Using electric mixer ; beat eggs, sugar and vanilla in large bowl until fluffy, about 2 minutes. Stir in white chocolate mixture. Fold in dry ingredients. Spread batter in prepared pan. Sprinkle reserved 1/3 cup white chocolate over batter. Bake until tester inserted into center comes out with a few crumbs still attached, about 45 minutes. Cool in pan on rack.
