WATERMELON AND BEET SALAD image

Number Of Ingredients 15

1 pound beets, roasted in foil at 425 degrees for 1-1.5h, peeled and cut into 1'' cubes.
2 cups watermelon, chopped in 1" chunks
1/2 cup red onion, sliced
Arugula
1/4 cup extra virgin olive oil
2-3 tbls balsamic or sherry vinegar
feta cheese to garnish
Alternate dressing:
1/4 cup freshly squeezed orange juice
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 cup minced shallots (1 large)
1 tablespoon honey
1/2 cup good olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Toss all ingredients with the extra virgin olive oil and vinegar. Garnish with feta cheese.
