Steps:
- Preheat oven to 375 degrees. Cut the feta into large tiangles and arrange them on a sinle layer in a baking dish. In a small bowl, combine 2 tablespoons EVOO with oregano , crushed red pepper, lemon zest and half of the garlic. Spread the marinade over the feta and let stand for at least 5 minutes or up to an hour. In a large skillet, heat the remaining 2 tablespoons EVOO over moderate heat. Add the remaining garlic and cook over moderate heat, stirring, until pale golden, 1-2 minutes. Add the greens, a handful at a time, and cook until tender, about 4 minutes. Pour off any liquid and season with S&P, and keep warm. Bake the feta for 5 minutes, until heated through. Spoon the greens onto 4 plates, add feta, olives. Drizzle any feta juices over and serve.
