Steps:
- In a non-stick skillet, heat 1 tbsp oil over medium heat. Add mushrooms, garlic and onion; cook for 5 mins. Add beans and red pepper, cover and cook, stirring occasionally, until beans are tender/crisp, 5 to 7 mins. In small bowl, whisk together remaining oil, tomatoes, vinegar, honey, s&p; drizzle over bean mixture. transfer to large bowl and toss to coat. Add spinich, half of the feta and the olives; toss well. Sprinkle with remaining feta.
