WALNUT CHEESECAKE COOKIES image

1/2 cup butter, softened
3 ounces cream cheese, softened
1 egg separated
1 teaspoon vanilla
1 teaspoon lemon peel
1/2 teaspoon salt
1 cup powdered sugar, sifted
1 cup flour
1 cup walnuts, finely chopped
raspberry preserves

Steps:

  • Cream butter, cream cheese, egg yolk, vanilla, lemon peel and salt until well blended. Gradually mix in sugar and flour to make stiff dough. Chill dough for several hours. Shape dough into 30 small balls. Beat egg whites until foamy. Dip balls into egg white then roll in walnuts. Arrange 2 inches apart on ungreased baking sheet and make a depression in the center with knife handle. Fill with 1/2 teaspoon of jam. Chill cookies 15 minuts in freezer before baking. Bake at 350° for 15 minutes. Remove to wire racks to cool. Apricot or cherry preserves are also good. Cookies may be frozen
