Wagon Wheel Omelet image

Another recipe that I have used for years and years. Makes a hearty breakfast, or a good "breakfast-for-supper" meal, along with hot biscuits and maybe even some gravy!

Number Of Ingredients 7

1 package(s) brown'n'serve sausage links (pk of 10)
1 package(s) simply potatoes hash browns
1/3 cup(s) onion, diced
1/3 cup(s) green bell pepper, diced
- salt and pepper, to taste
2 - eggs, beaten
3/4 cup(s) cheddar cheese, shredded

Steps:

  • Brown sausage links in a 12" non-stick skillet, according to directions. Remove to paper towel.
  • Combine hash browns, onion and bell pepper. Press into same skillet that you used to brown sausage links. Sprinkle potatoes with salt and pepper, cover, and let cook over medium-low heat for 10-15 minutes, or until bottom of hash browns is a light brown.
  • Meanwhile, beat two eggs. Pour over potatoes at the end of the 10 minutes, tilting skillet to coat top of potatoes. Add sausage links, in a spoke design, around the skillet. Cover, and let cook an additional 5 minutes, or until eggs are set. Turn off heat, sprinkle with cheese and cover until cheese is melted.
