VEGETARIAN GUMBO image

Yield 6-8 bowls

Number Of Ingredients 19

1/4c vegetable oil (or butter)
1/4c flour
1T oil, for sautéing
1 lg onion, diced
3-4 cloves garlic, chopped
1/2 red, 1/2 yellow, 1/2 orange bell peppers, chopped (or whatever color you like)
3/4-1 lb okra, diced
2 fillets of quorn soy chicken (frzn section), diced
3 soy sausage links, such as Field Roast, diced
4-5C vegetable broth, ~32oz
1 can diced tomatoes
1 sm can tomato sauce (if needed)
1/4t oregano
1/4t cayenne
1/4t cumin
a good long dash of hot sauce, such as Franks Red Hot
onion & garlic powder if needed

4C cooked rice

Steps:

  • Saute peppers until almost done in large skillet or dutch oven. Add onions and garlic. In separate pan, heat oil or butter, add flour, to make a roux. Fry okra if liked. Add vegetable broth and tomatoes to onion mixture. Let simmer. Add spices. Add okra and soy meat near end (to retain meats texture). Add tomato sauce or more broth to desired consistency. I add extra cayenne and hot sauce to make it extra spicy. Hot sauce is more vinegary so be careful. Meanwhile cook rice, about 15 minutes in microwave for about 2C uncooked.
