VEGETARIAN CHILI CASSEROLE image

Number Of Ingredients 8

2 cups ground beef substitute, thawed
2 cups well drained pinto beans (better from scratch)'
1 cup "broth" from pinto beans
1 cup tomato sauce
1 cup grated cheese of your choice
1 package corn bread mix along with whatever ingredients the mix calls for.
1 cup frozen sweet corn corn, off the cob, thawed.
Cumin, Garlic Powder, Onion Powder, Salt, Pepper to taste

Steps:

  • Combine meat substitute, beans, bean "broth", corn, tomato sauce, half the cheese and spices in a large bowl. Pour into a casserole dish or deep baking pan and spread evenly. Prepare cornbread according to package. Pour batter over the top of the bean mixture and spread eavenly, covering the bean mixture completely. Sprinkle the remaining cheese over the top. Bake at 375 for 25 - 30 minutes. When a fork inserted into the center comes out clean it's done!
