Steps:
- 1. Heat oven to 400^. Lightly spray a 9x13-inch baking dish. Sprinkle zucchini, tomato , onion and cheese in that order in the dish.
- 2. In a medium bowl, stir remaining ingredients with a fork or whisk until blended. Pour over vegetables and cheese.
- 3. Bake for 30-35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. --- Note:This photo with bacon- gotta have my bacon. Cooked chopped ham, bacon, sausage ,hot-dogs or spam diced may be added if you desire a meaty dish.
