Vegetable Bake image

Bisquick recipe idea: I love my Bisquick and this is a great recipe to use up some of those end of summer vegetables. Like those never ending zucchini; but don't stop there- you can change up the vegetable to whatever you have on hand or what your family likes. This can be ready to bake in 15 minutes. Put in oven for 35 minutes...

Number Of Ingredients 8

1 c chopped zucchini or broccoli, etc.
2 c ripe tomato chopped
1/2 c chopped onion
2/3 c grated parmesan cheese
1/2 c bisquick heart smart baking mix
1 c fat free skim milk
1 c fat free egg product or 2 large whole eggs, beaten
1/4 tsp each salt and pepper

Steps:

  • 1. Heat oven to 400^. Lightly spray a 9x13-inch baking dish. Sprinkle zucchini, tomato , onion and cheese in that order in the dish.
  • 2. In a medium bowl, stir remaining ingredients with a fork or whisk until blended. Pour over vegetables and cheese.
  • 3. Bake for 30-35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. --- Note:This photo with bacon- gotta have my bacon. Cooked chopped ham, bacon, sausage ,hot-dogs or spam diced may be added if you desire a meaty dish.
