Vegan Broccoli and Cauliflower salad image

This is what I am making to pick nick with on our road trip to Ohio. It is my own version of one my mom used to make for cookouts when I was a kid.

Number Of Ingredients 8

1 bunch cauliflower, cut up into small flourets
1 bunch briccoli, cut into small flourets
1 can(s) black olives, sliced
1 jar(s) green olives, with pimentoes sliced
1 pt cherry tomatoes, halved
1 pkg vegan mozzarella cheese
1/2 c bacos bits, bacos chips(they are vegan)
1 c italian dressing (your choice)

Steps:

  • 1. I like to blanch my broccoli and cauliflower for about 3 minutes in boiling salted water, and then shock in ice water. You can leave it raw, but blanching it gives it a nice vibrant color.
  • 2. put all ingredients into a large bowl and toss.
  • 3. let marinade in the fridge for 30 minutes or over night. this is one of those dishes that is better made the night before.
