Number Of Ingredients 10

Ingredients for the dough:
2 cups all-purpose flour
½ tsp salt
1 egg
½ cup + 5 Tbsp cold water
Ingredients for filling:
1 egg
Pinch of salt
5 Tbsp cottage cheese
2 - 3 Tbsp butter for frying vareniki, once boiled

Steps:

  • On a flat clean wotking surface, combine, using your hands, all the dough ingredients. Leave to rest until you prepare the filling.
  • For the filling, combine egg, salt and cottage cheese in a mug or small bowl, and leave aside.
  • Lightly flour the working surface and roll your dough to be 1 to 1.5 millimeters thick.
  • Cut the circles to have 3 inches in diameter. You should have 18 dough circles.
  • Add 1 teaspoon of cottage cheese filling into the center of each circle.
  • If necessary, wet the edges and bring up together to close. Pinch to seal.
  • Boil a large pot of salted water. I recommend you add 1 teaspoon of salt on 3 cups of water.
  • When water starts to boil, gently add vareniki in batches. Don't overcrowd the pot. This is important. Boil until dumplings rise to float on the top. It should take 2 - 3minutes for every batch.
  • Remove with slotted spoon and place in colander to drain.
  • Place butter into large pan and fry the vareniki to get golden crust.
  • Serve immediately.
