Steps:
- On a flat clean wotking surface, combine, using your hands, all the dough ingredients. Leave to rest until you prepare the filling.
- For the filling, combine egg, salt and cottage cheese in a mug or small bowl, and leave aside.
- Lightly flour the working surface and roll your dough to be 1 to 1.5 millimeters thick.
- Cut the circles to have 3 inches in diameter. You should have 18 dough circles.
- Add 1 teaspoon of cottage cheese filling into the center of each circle.
- If necessary, wet the edges and bring up together to close. Pinch to seal.
- Boil a large pot of salted water. I recommend you add 1 teaspoon of salt on 3 cups of water.
- When water starts to boil, gently add vareniki in batches. Don't overcrowd the pot. This is important. Boil until dumplings rise to float on the top. It should take 2 - 3minutes for every batch.
- Remove with slotted spoon and place in colander to drain.
- Place butter into large pan and fry the vareniki to get golden crust.
- Serve immediately.
