VANILLA GELATO image

Yield 1 quart

Number Of Ingredients 7

¾ C sugar
1C cream
2C whole milk
1t vanilla
3 egg yolks
1 vanilla bean split, or 1t vanilla extract
1t salt, kosher

Steps:

  • Beat yolks, sugar & salt until pale yellow. Scald milk, vanilla bean, & cream. Add hot liquid in a stream to yolks with mixer running. Return to heat until thickened. Just boiling. Strain into a metal bowl. Dehydrate in refrigerator 8 hours. Pour into ice cream freezer. Freeze. Transfer into storage container, freeze solid
