My kids love breakfast for dinner, so I was looking for something different when these pancakes caught my eye. They are light, fluffy and well worth the extra effort. Steps:
- Whisk together the cake flour, baking powder, salt and sugar in a large bowl.
- In a separate bowl or measuring cup, whisk together the milk, egg, and the vanilla.
- Add wet ingredients to dry ingredients and mix until just combined; do not over mix. Add 1/4 cup melted butter and again, stir just until combined.
- Heat pan or griddle over medium high heat. Melt about a tablespoon of butter and fry the pancakes until golden.
- Serve with butter and syrup. Enjoy :)
