UPSIDE DOWN PUMPKIN CAKE image

Number Of Ingredients 13

Filling:
3 large eggs
2 cans pumpkin pie mix
1 1/4 cup sugar
1 can 12 oz evaporated milk
2 t. cinnamon
1 t. nutmeg
1/2 t. ginger
Topping:
1 pkg. yellow cake mix
3/4 cup melted butter
1 cup chopped pecans
Whipping cream

Steps:

  • Pre-heat oven to 350 degrees. Lightly beat eggs & mix with pumpkin pie mix and other filling ingredients. Pour into 9x13 pan. Sprinkle on yellow cake mix. Drizzle melted butter. Bake for 30 mins. Sprinkle on pecans and bake 30 mins more or until golden brown. When serving - turn pieces upside down and top with whip cream.
