ULTRA CREAMY HAM & POTATOES image

This is probably one of my very favorite meals, harking back to childhood. One of the best comfort foods in the world! Of course my mother never heard of a crock pot when I was growing up--hers was baked in the oven. I have tweaked this recipe just a bit to make it even more luscious. 6 medium red potatoes, thinly sliced
2 medium onions, finely chopped
1 1/2 c fully cooked ham, cubed
2 Tbsp butter
2 Tbsp all purpose flour
1 tsp ground mustard
1/2 tsp salt
1/2 tsp pepper
1 can(s) (10-3/4 oz.) condensed cream of celery soup, undiluted
1 1/3 c half and half
1 c (4 oz.) shredded cheddar cheese (optional)

Steps:

  • 1. In a slow cooker, layer the potatoes, onions, and ham. In a saucepan, melt butter. Stir in flour, mustard, salt and pepper until smooth.
  • 2. In a bowl, combine the soup and half and half; gradually stir into flour mixture. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Pour over the ham.
  • 3. Cover and cook on LOW for 8-9 hours or until potatoes are tender. If desired, sprinkle with cheese before serving.
