Steps:
- 1. Preheat oven to 350.
- 2. In small skillet, melt margarine. Add green pepper and onion. Saute until crisp and tender
- 3. In large bowl, combine the two corns, eggs, and muffin mix. Blend well.
- 4. Add onion/pepper mixture .. and mix well. Pour into 2 quart casserole dish. Sprinkle with cheddar cheese.
- 5. Bake until firm or set (about 55-65 minutes) Let stand 5 minutes before serving.
