TUSCAN TOMATO SOUP image

Number Of Ingredients 11

1/3 c. olive oil
1 ½ c. chopped onions
1 c. chopped carrots (can use food processor)
2 t. freshly chopped garlic
½ c. chopped fresh parsley
1 ½ t. dried basil
2 28 oz. cans Dei Frattelli crushed tomatoes
2 chicken bouillon cubes (opt.)
3 ½ c. good quality chicken stock
Salt to taste
1 T. brown sugar

Steps:

  • Heat olive oil in pan; add onions and carrots; cook 4 min. while stirring. Add garlic, cook one minute more. Add parsley/basil mixture and tomatoes and mix well. Stir in stock and bring soup to a simmer for 30-40 min. Add sugar and salt to taste. Top with croutons, parmesan and chopped parsley.
