Turkey Hash - Thanksgiving Leftovers image

This is a great way to reinvent boring turkey leftovers. Making a hash from leftover mashed potatoes and turkey is genius. Cooking down the onions really has a punch of flavor. I love the crunch on the outside of the hash. Serving a fried egg on top sends this over the top. A great breakfast, but it's hearty enough for dinner too.

Number Of Ingredients 6

- chopped cooked turkey
- mashed potatoes
- chopped onions
- olive oil
- salt/pepper if desired
- a fried egg for the top of each serving

Steps:

  • Check out your leftovers pile in the fridge. Grab the turkey scraps. Grab the mashed potatoes. Grab an onion.
  • Heat up a large skillet on medium-high heat. Add some olive oil to the pan (enough the lightly coat the bottom). Toss in some chopped onion. Enough for the amount of turkey and potatoes you plan to use.
  • Once the onions are tender, add the turkey and stir it around.
  • Throw in some mashed potatoes until you think it's enough.
  • Cover the pan with a lid or some foil and leave it alone for 5 minutes.
  • Scrape up the hash from the bottom of the pan and turn it over, or stir it around. Leave it alone for 5 more minutes, covered. You can turn off the heat. Check seasonings.
  • Check the seasoning. Dish it up with a fried egg. It's soooo good!
