Tupelo Honey Wing Sauce image

Wings are always around during football and basketball seasons, but I think it's time that they fly year-round. Why put restrictions on them? To each his own, I say when it comes to hot pepper sauce, I prefer Texas Pete. Which is made in North Carolina of all places!!! This recipe calls for your own smoked jalapenos, but Contessa smoked chipotle peppers in adobo are a great substitute. This recipe is from the Tupelo Honey Café Cookbook, one of my favorites when it comes to New Low Country Cooking.

1/2 cup(s) tupelo honey
2 tablespoon(s) orange marmalade
3/4 cup(s) texas pete hot sauce
1 1/2 teaspoon(s) smoked jalapenos or chipotle peppers in adobo
1 teaspoon(s) butter, unsalted

Steps:

  • Puree the honey, marmalade, hot pepper sauce and jalapenos in a food processor until smooth.
  • Transfer to a small saucepan over medium heat, bring to a simmer, and cook for 1 minute.
  • Add the butter and stir until melted.
  • Serve immediately or refrigerate in an airtight container for up to 2 weeks.
