Tuna and White Bean Salad image

A light summer lunch with a Greek twist. Could be eating in Kos!

Number Of Ingredients 10

15 ounce(s) can white beans
5-7 ounce(s) can tuna packed in water
1/4 cup(s) sweet onion, finely chopped
2 tablespoon(s) red or yellow pepper, finely chopped
10-12 - kalamata olives, cut up
3 medium tomatoes, cut into wedges
2 tablespoon(s) prepared greek salad dressing
- salt, pepper, balsamic vinegar
1/4 cup(s) feta cheese crumbles
- lettuce for garnish

Steps:

  • In a bowl, mix together rinsed beans, drained tuna, onion, peppers, olives. Stir in salad dressing. (If not using prepared dressing, check out a recipe for Greek salad dressing).
  • Cut each tomato into 8 wedges, keep attached at the bottom. Sprinkle with salt, pepper and balsamic vinegar on cut edges of tomatoes. Scoop equal portions of tuna salad on each tomato. Top with feta cheese. Season with salt and pepper to taste. Tuck some lettuce around each tomato, if desired.
