Tootsie's Fresh Apple Cake image

I love this cake because it does not taste at all like apples! It comes from my cousin Tootsie, who is a fabulous cook.

Number Of Ingredients 14

1 cup(s) sugar
1 cup(s) brown sugar
1 1/4 cup(s) wesson oil
2 - eggs
3 cup(s) apples, finely chopped
3 cup(s) all-purpose flour
1 teaspoon(s) baking soda
1/4 teaspoon(s) salt
1 teaspoon(s) cinnamon
2 teaspoon(s) vanilla extract
JEAN ELLIS' ICING
1 cup(s) brown sugar
3/4 stick(s) butter
1/4 cup(s) evaporated milk

Steps:

  • Preheat oven to 350.
  • Sift together flour, soda, salt and cinnamon...set aside.
  • Cream together sugar, brown sugar and oil.
  • Add the eggs to the creamed mixture and beat well.
  • Now add the flour mixture and vanilla to the creamed mixture, it will be thick.
  • Fold the apples into the batter.
  • Pour into a prepared (greased & floured) tube or bundt pan.
  • Place into the oven, decrease temperature to 325 and bake for 1 hour. Cool 10 min. in pan, and turn out onto cake plate.
  • FOR THE ICING: Bring the sugar, butter and pet milk to a boil and cook for 3 minutes.
