TOMATO, LENTIL, AND SPINACH SOUP image

Number Of Ingredients 9

2 Tbs olive oil
1/2 onion, chopped
2 c sliced chestnut mushrooms
2 large cans of tomato soup (not condensed)
1 c dry brown lentils
1/2 Tbs cumin
1/2 Tbs chili powder
1 tsp garlic powder
1 lb fresh spinach

Steps:

  • In a large saucepan, heat oil, onion, and mushrooms over medium heat until onions are translucent. Add soup, lentils, and spices. Bring to a boil, reduce heat, and simmer on low, stirring occasionally, until the lentils are cooked through (about 40 minutes). (If too much of the soup is absorbed before the lentils are cooked, add water 1/4 c at a time.) Stir in spinach until wilted and remove from heat immediately.
