Tomato and Blue Cheese Pasta Salad image

Great cold side dish

Number Of Ingredients 8

1 pkg trottole or rigatoni pasta
2 lb grape tomatoes
4 oz arugula or spring mix lettuce
6 oz crumbled blue cheese
1 tsp kosher salt
5 Tbsp olive oil, extra virgin
3 Tbsp assorted fresh herbs, such as basil, dill, oregano
2 Tbsp balsamic vinegar

Steps:

  • 1. Prepare pasta according to package directions
  • 2. Toss together hot pasta, olive oil, balsamic vinegar and assorted herbs
  • 3. Cool completely
  • 4. Stir tomatoes and cheese into pasta mixture
  • 5. Just before serving stir in arugula or spring mix lettuce, adding salt and pepper to taste
