TOASTED COCONUT PIE image

3 beaten eggs
1 1/2 c sugar
1/2 cup butter or margarine, melted
4 tsp lemon juice
1 tsp vanilla
1 1/3 cup flaked coconut
1 unbaked pastry shell

Steps:

  • beat eggs and add melted butter slowly, then lemon juice and vanilla. stir in coconut. Pour into unbaked pastry shell, bake in moderate oven 350 degrees for 40-45 mins, until set. cool before serving
