8 ounces phyllo dough
1 cup butter, melted
Four-Cheese Filling

Four-Cheese Filling:
4 eggs
8 ounces feta cheese, crumbled
8 ounces dry curd cottage cheese
4 ounces blue cheese, crumbled
1/4 cup grated Parmesan or Romano cheese
1/8 teaspoon pepper

Steps:

  • Let the wrapped phyllo stand at room temperature. Unwrap, cover with wax paper and a damp towel to prevent drying. Place 1 sheet of phyllo at a time on the work surface and brush with melted butter. Cut the phyllo horizontally into 5 strips. Place a small spoonful of Four-Cheese Filling at the end of a strip, fold the phyllo over the filling about 1/2 inch and roll up; the finished roll should resemble a cigar. Place on a baking sheet and brush with additional melted butter. Repeat with the remaining phyllo, filling and melted butter. Bake at 375° for 20 minutes or until golden brown. Tiropetes may be frozen before baking; use wax paper between layers to prevent sticking together. Four-Cheese Filling: Beat the eggs in a large mixer bowl. Add the cheeses and pepper and mix well.
