THYME LIME CHICKEN image

Yield 3-4 servings

Number Of Ingredients 8

2 thin chicken breasts
2 tbsp finely sliced green onion
1 tsp dried thyme
2 garlic cloves, crushed
6 tbsp melted butter
salt and pepper
1/4 cup lime juice
cilantro to garnish

Steps:

  • Place chicken in an ovenproof dish. Mix spring onion through lime juice and coat chicken with mixture. Cover the chicken lossely with saran wrap and marinate in a cool place for several hours or overnight in fridge. Preheat oven to 375 degrees. Remove saran wrap and cover dish with foil. Bake chicken for 45 minutes to 1 hour, then remove foil and cook a few more minutes until brown. Serve hot with rice, garnishing with lime juice and cilantro.
