My mother made a lot of corn bread it was the thin kind I make it that way too but I have added a little jack cheese.

Number Of Ingredients 11

1/2 c yellow cornmeal
1/2 c all purpose flour
1/4 c sugar
1 1/2 Tbsp baking powder
1/4 tsp salt
1/2 tsp pepper
1 large egg
2/3 c whole milk
4 Tbsp butter
1/2 c pepper jack cheese
pinch shortening

Steps:

  • 1. Pre-heat oven 425 degrees, rub a cast iron pan with a little shortening . Place butter in pan and put in oven to melt
  • 2. WISK ALL DRY INGREDIENTS TO COMBINE EXCEPT PEPPER
  • 3. ADD THE REST OF INGREDIENTS PLUS MELTED BUTTER FROM PAN STIR TILL COMBINED, POUR EVENLY INTO PAN. Sprinkle with pepper over top.
  • 4. BAKE 12-14 MINUTES.
