One of my favorite comfort foods and so easy to make. I learned from just watching my mother. Since she cooked for a large family, I have trimmed most of her recipes down to about four servings. They can always be doubled. Photo from: flyfishohio.us

Steps:
- 1. Place the sliced potatoes in a 5-qt. Dutch oven, layered with the ham.
- 2. In a medium saucepan, melt butter. Stir in the flour and mix together. Add the milk, a little at a time, stirring with a wire whisk until the mixture begins to thicken.
- 3. Add salt and pepper, stir well, and pour over potatoes and ham. If you wish, you may add 4 to 8 oz. shredded cheddar cheese to the sauce and mix until cheese has melted.
- 4. Place Dutch oven, covered, into a preheated 375-degree oven for one hour. Remove lid and continue cooking 1/2 hour more.
