The Best Cranberry Walnut Bread image

This is my favorite cranberry bread recipe. It is tart and sweet at the same time. This recipe makes the the bread so moist. It freezes well!

1/3 c orange juice
1 Tbsp orange zest
2/3 c buttermilk
6 Tbsp unsalted butter
1 large egg beaten lightly
2 c un-bleached flour
1 c granulated sugar
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 1/2 c fresh cranberries chopped coarse
1/2 c walnuts, chopped coarse

Steps:

  • 1. Pre-heat oven to 375 degrees and prepare a loaf pan for baking. My favorite is a stoneware loaf pan sprayed with PAM baking spray.
  • 2. Stir, the orange juice, orange zest, buttermilk, melted butter and egg together in a bowl.
  • 3. Whisk together all dry ingredients. Add the liquids, blending together.
  • 4. Add chopped cranberries and walnuts, stirring until well mixed.
  • 5. Bake for 20 minutes, then reduce the heat to 350 degrees and bake for another 30 to 35 minutes.
