THAI-STYLE BEEF WITH NOODLES image

1 tblsp. honey
1 tblsp. soy sauce
2 tblsp. asian fish sauce, divided
1 lb flank steak
3 tblsp. veg oil, divided
2 large shallots, thinly sliced
1 tblsp. finely chopped &peeled ginger
1 1/2 tsps thai grren curry paste
1 3/4 cups reduced-sodium beef broth
1 tblsp. fresh lime juice
1 red bell pepper cut in 1/4 in strips
1 bunch of scallions trimmed and cut into 3-inch pcs
3/4 lb dried asian egg noodles

Steps:

  • mix together soy, honey, 1 tblsp fish sauce, and 1/4 tsp of salt in shallow baking dish, then add steak and turn to coat. mariante room temp 20 min. while steak marinates heat 2 tblsp oil in small heavy saucepan over med-high heat until it shimmers the cook shallots, stirring occasionally until browned well about 8 min. add ginger and curry paste and cook stirring occ 1 min. then add broth and simmer 5 min. stir in lime juice, remaining fish sauce and salt keep warm, covered. grill steak about 8 min and transfer to cutting board let stand 5 min meanwhile tos bell pepper and scallions with reamianing oil then grill 5 min. transfer to large bowl. while steak stands cook noodles until al dente. drain then add to vegetables in bowl divide among 4 bowls and top with broth cut steak in half length wise then thinly slice across the grain and serve on top of noodles
