Thai Shrimp w Glass Noodles in Clay Pot image

This is called Goong Ob Woon Sen in Thailand. A delicious noodle dish in a clay pot. If you don't have a clay pot a dutch oven works too.

SHRIMP
6 clove garlic
2 Tbsp cilantro stems
1 tsp salt
1 Tbsp oil
16 shrimp peeled and deveined
GLASS NOODLES
8 oz glass noodles soaked in hot water for 20 minutes
SAUCE
2 c chicken stock
1 Tbsp oyster sauce
1 Tbsp soy sauce
1 Tbsp dark soy sauce
1 Tbsp whiskey
1 tsp sesame oil
1 tsp grated ginger
1/4 c brown sugar
VEGGIES
3 scallions chopped
8 oz asparagus tips about 2 inches in length
2 Tbsp vegetable oil
cilantro for garnish

Steps:

  • 1. For the shrimp Place the garlic, cilantro stems, and salt in a motar and pestal and pound these into a paste. Add the 1 tbsp of oil. Rub all over the outside of the shrimps. Set aside.
  • 2. For the sauce. Mix the stock, oyster sauce, soy sauce, dark soy sauce, whiskey, sesame oil, ginger, and brown sugar. Set aside.
  • 3. Preheat a 2 qt clay pot and add 2 tbsp. veg oil. Brown the shrimps on both sides working in batches. Remove to a plate and set aside.
  • 4. Turn the heat up to high add the sauce and scallions. Bring to a boil. Drain the noodles and add them to the pot. Scatter the asparagus over the top and cover the pot and reduce heat to medium. Let cook 5 minutes. Add the shrimp on top and cook another 5 minutes.
  • 5. Serve topped with fresh cilantro
