THAI RICE BREAD image

1 tsp. salt
1 Tbs. baking powder
1 cup cooked rice, chilled and mashed
3 eggs, beaten
2 1/2 cups milk
4 green onions, chopped
4 Thai peppers, stemmed, seeded and minced
1 Tbs. melted butter

Steps:

  • Pre-heat oven to 425. Line the bottom of an 11-inch loaf pan with parchment paper and lightly oil the sides of the pan. In a medium bowl whisk together the cornmeal, salt and baking powder. In a larger bowl whisk together the eggs, milk, green onions and peppers until well-combined. Stir in the cornmeal mixture until smooth. Stir in the mashed rice and butter until smooth. Spoon the batter into the prepared pan and smooth out. Place in oven and bake 35 minutes. Remove from the oven and let cool in the pan 10 minutes. Remove from the pan and let cool on a rack until ready to serve.
