Steps:
- In medium size saucepan, combine rice, 1 1/2 cups cold water, concentrated chicken stock, parsley and 1 tsp.l salt. Bring to boil and stir once, reduce heat, cover and simmer for 15 minutes. Let cool. Combine rice with red pepper, green onions, olive oil, vinegar, nuts and salt and pepper to taste. Serve chilled or at room temperature.
