Texas Neiman Marcus Bars image

TEXAS: Munch your way across the USA. Pauleta Hicks, the state of Texas is now represented. This recipe is from "Capitol Cookies" with recipes from every state capital & Washington, DC. This recipe was submitted to this cookie cookbook by the Catholic Family Fraternal of Texas in Austin, Texas. I personally have not made these so, Pauleta, if you make these, let us know if they make your state proud.

Number Of Ingredients 12

FIRST LAYER:
1 box(es) yellow cake mix
1 stick(s) butter, melted
2 - eggs
SECOND LAYER:
16 ounce(s) powdered sugar
8 ounce(s) cream cheese, softened
3/4 cup(s) coconut
2 - eggs
1 teaspoon(s) vanilla extract
1/2 cup(s) chopped pecans
- enough powdered sugar to sprinkle over top

Steps:

  • Preheat oven to 350. Mix together first layer and put in 9 x 13 greased & floured pan.
  • Mix powdered sugar, cream cheese, coconut, eggs and vanilla together and spread over first mixture. Bake 10 minutes then sprinkle pecans on top and bake 30 additional minutes.
  • Remove from oven and sprinkle powdered sugar over top while still warm.
  • VARIATION: use 1 box of butter fudge cake mix rather than yellow if you prefer.
