Tequila Marinated Steak image

Number Of Ingredients 11

4 cloves Minced Garlic
1 Jalapeno pepper (seeded and minced)
2 Scallions (trimmed and roughly chopped
1/3 cup Cilantro (chopped)
6 tablespoons Fresh oregano leaves
1/2 cup Tequila
1/4 cup Orange Juice
1/4 cup Lime Juice
1 tablespoon Orange zest
1 tablespoon Lime Zest
1 Bone in dry aged rib steak (1.5 - 1.75 pounds - about 1.5 inches thick)

Steps:

  • Combine marinade ingredients
  • Add steak to marinade and turn several times
  • Put in heavy duty zip bag and refrigerate 4 to 24 hours
  • Preheat oven to 500 degrees and heat cast-iron skillet over high heat
  • Remove meat from marinade and pat dry
  • Season with kosher salt and fresh pepper
  • Sear meat over high heat for 2 minutes per side
  • Transfer pan to oven
  • Cook 6-8 minutes flipping steak once (internal temp of 140 degrees for medium-rare)
  • Let steak rest for 5 minutes before serving
