TASTY SAUSAGE & RICE CASSEROLE image

I was running low on ingredients to make for dinner so I Googled what I had and came up with this dish, which I have tweaked a bit to include a couple of other things I had on hand. Very simple and very tasty! 08-07-14

Number Of Ingredients 5

3 cup(s) cooked basmati rice (or any type of rice you prefer)
1 pound(s) pork or beef sausage
1 clove(s) garlic, minced
1 small onion, chopped or 2 tsp. minced onion
2 cup(s) v-8 juice

Steps:

  • Cook rice as directed on package; set aside.
  • If sausage comes in links, cut into bite-size pieces. In a large skillet, brown the sausage, stirring constantly to keep separated into pieces. Remove sausage and keep warm.
  • Saute onion in the same pan; add garlic when onion is almost translucent and cook 1 minute more. Drain off the fat; add cooked rice and sausage and mix thoroughly.
  • Place the mixture into a 2-qt. casserole dish; cover with V-8.
  • Cover and bake in a preheated 350º oven for 40 minutes.
