Taco Salad with Spinach image

Quick and delicious! This healthy meal can be prepared quickly and easily and is delicious. Perfect for a busy weeknight. Serve with guacamole.

1 pound ground beef
½ cup chopped onion
½ cup chopped red bell pepper
½ cup chopped mushrooms
1 teaspoon salt
1 teaspoon chili powder
1 (10 ounce) package spinach leaves
1 (15 ounce) can black beans, drained
1 large tomato, chopped

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef, onion, red bell pepper, mushrooms, salt, and chili powder together in the hot skillet until the beef is completely browned, 7 to 10 minutes; drain and discard grease.
  • Spread spinach leaves into a salad bowl; top with beef mixture. Add black beans and chopped tomato.
